What you'll need

Serves 2

  • 2 small zucchinis, cut into chunks
  • 8 cherry tomatoes
  • 2 tablespoons olive oil
  • Salt and black pepper
  • 2 eye fillet steaks, about 120g each
  • 1/4 cup basil
  • 80g rocket lettuce

The easy bit

  1. Preheat oven to 180ÂC.
  2. Place the zucchini and tomatoes in a roasting dish, drizzle over 1 tablespoon of the oil and season with salt and pepper.
  3. Roast for 15-20 minutes until cooked.
  4. Season the steaks with the remaining oil, salt and pepper.
  5. Heat a non-stick frying pan and seal the fillet on both sides, then place on an oven tray and roast for 15 minutes or until cooked to your liking.
  6. Toss the basil through the warm vegetables and serve with the fillet and rocket.
