What you'll need
Serves 2
- 2 small zucchinis, cut into chunks
- 8 cherry tomatoes
- 2 tablespoons olive oil
- Salt and black pepper
- 2 eye fillet steaks, about 120g each
- 1/4 cup basil
- 80g rocket lettuce
The easy bit
- Preheat oven to 180ÂC.
- Place the zucchini and tomatoes in a roasting dish, drizzle over 1 tablespoon of the oil and season with salt and pepper.
- Roast for 15-20 minutes until cooked.
- Season the steaks with the remaining oil, salt and pepper.
- Heat a non-stick frying pan and seal the fillet on both sides, then place on an oven tray and roast for 15 minutes or until cooked to your liking.
- Toss the basil through the warm vegetables and serve with the fillet and rocket.
