What you'll need
Serves 1 (as a light meal)
- 2 king prawns, cleaned
- zest of 1⁄2 lemon
- 1 green chilli, chopped
- 1 clove garlic, crushed
- 3 teaspoons olive oil
- salt and pepper to taste
- 1 tablespoon dill, picked
- 1⁄4 baby cos lettuce, shredded
- 1⁄4 small red onion, sliced
- 3 cherry tomatoes, halved
- juice of 1 lime
The easy bit
- Marinate prawns in lemon zest, chilli, garlic, 2 teaspoons of the olive oil, and salt and pepper for 30 minutes.
- Grill the prawns for about 4 minutes on each side.
- Toss together dill, lettuce, onion and cherry tomatoes. Dress with lime juice and remaining olive oil. Rest prawns on top of salad and serve with a lemon wedge.
