What you'll need
- 1/2 tablespoon extra-virgin olive oil
- 470g egg whites
- 150g 2% cottage cheese
- 1/2 teaspoon garlic powder
- 1/4 teaspoon seasoning salt
- 1/4 cup shallots or red onion (chopped)
- 1/4 cup spring onion (chopped)
- 1 medium red capsicum (chopped)
- 1/2 cup steamed or frozen broccoli (finely chopped)
- 6 slices bacon (cut in half)
- 1/4 cup shredded light cheese
- Olive oil spray
The easy bit
- Preheat the oven to 175°C. Spray a nonstick 12 cup muffin tin generously with oil.
- Sauté the shallots, scallions and capsicum in oil over medium-low heat and cook until tender.
- Add the broccoli and cook for another minute.
- In a large bowl combine the egg whites, cottage cheese, garlic powder and seasoning salt.
- Add the veggies and mix.
- Line each cup of the muffin tin with a half slice turkey bacon around the edges and pour in the egg mixture, about 1/3 cup each.
- Top with the shredded cheese and bake in the centre of the oven about 25 minutes, or until set.
