What you'll need 

  • 1/2 tablespoon extra-virgin olive oil
  • 470g egg whites 
  • 150g 2% cottage cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon seasoning salt 
  • 1/4 cup shallots or red onion (chopped) 
  • 1/4 cup spring onion (chopped) 
  • 1 medium red capsicum (chopped) 
  • 1/2 cup steamed or frozen broccoli (finely chopped) 
  • 6 slices bacon (cut in half) 
  • 1/4 cup shredded light cheese 
  • Olive oil spray

 

The easy bit 

  1. Preheat the oven to 175°C. Spray a nonstick 12 cup muffin tin generously with oil. 
  2. Sauté the shallots, scallions and capsicum in oil over medium-low heat and cook until tender. 
  3. Add the broccoli and cook for another minute. 
  4. In a large bowl combine the egg whites, cottage cheese, garlic powder and seasoning salt. 
  5. Add the veggies and mix. 
  6. Line each cup of the muffin tin with a half slice turkey bacon around the edges and pour in the egg mixture, about 1/3 cup each. 
  7. Top with the shredded cheese and bake in the centre of the oven about 25 minutes, or until set.
