What you'll need
Serves 2 (meals)
- 1 teaspoon sesame oil
- 2 cloves garlic, sliced
- 2 teaspoons grated fresh ginger
- 400g mussels, cleaned
- ½ cup light coconut milk
- 2 tablespoons lemon juice
- 1 tablespoon kecap manis
- ¼ cup fresh coriander leaves
The easy bit
- Heat sesame oil in a saucepan, add the garlic and ginger cook for 1 minute, then add the mussels and mix well.
- Add the coconut milk and lemon juice and cover.
- Steam the mussels for 3-4 minutes until they open.
- Add the kecap manis and coriander, mix well and serve.
Tip: Depending on what is available at your local fish shop, you can also use clams instead of mussels.
